Crescent Bacon Breakfast Ring

Crescent Bacon Breakfast Ring

This recipe has a great feeling because this is the first I made for you guys here on my blog.  In itself, it represents the spirit of what I wanted to create with my personal blog – The Nourishing Art.  It’s bright, creative, beautiful and tasty.  One of many more and a lot of fun we’re about to have around this thing that plays such a grand part in our lives – FOOD!

When I was making this and building the layers, I would call my 6-year-old son over and show him the progression in the short amount of time it takes to prep.  I was getting “OOOs” and “AHHHs”.   Actually, I think it is a great recipe to let your young kids assist with.  It looks like art so they will love the fun of helping.  My son would have helped more if I could have pulled him away from his Hot Wheels and dinosaurs 😅.  Yeah good luck with that.  This doesn’t take long at all so his “is it ready yet?” was responded to with “almost, get ready!”.  This is also great for when the family comes to town to visit. Enjoy this fun one!

Prep time: 15mins          Cook Time: 15mins         Total: 30mins         Servings: 8

Ingredients:

4 or 5 eggs

½ green bell pepper (chopped)

½ red bell pepper (chopped)

¼ cup of chopped mushrooms

Salt to taste

Pepper to taste

8 slices of bacon fried

8 oz crescent rolls refrigerated (only need one can) *Don’t use the Pillsbury crescents roll. Choose a better brand, organic if possible.  My taste tester liked the Immaculate organic brand most and I did too.

1 cup cheddar cheese shredded

*Light brush of butter if you want a shiny golden look at end.

Instructions:

  1. Preheat your oven to 375 degrees
  2. Lay out the crescent rolls overlapping a little bit on cookie sheet lined with parchment paper like a star as shown. Don’t be afraid to stretch out the dough triangles a bit if they roll of somewhat short.
  3. In a skillet, fry the bacon and then place on plate with paper towel for just a moment to catch excess grease.  Now place bacon on the crescent roll star as shown and put the first circle of cheddar around
  1. Beat the 4 or 5 eggs in a bowl
  2. In a skillet (can be same bacon was cook just drain grease), lightly sauté the chopped peppers and mushrooms, salt and pepper. This also helps remove water from mushrooms that could soggy the ring when baked
  3. Pour in the eggs over the sauté and scramble
  4. Scoop your scrambled eggs onto the star in a circle on top of your cheddar and then put a layer of cheddar on top of your scrambled eggs
  1. Fold your crescents over and brush on egg wash if you want very lightly for nice golden color
  2. Bake for 15-18mins.  Take out and bush with a nice butter then garnish with parsley if preferred and serve warm
