You know initially I hadn’t intended to feature Chicken Pot Pie on my website because I usually like to do more interesting dishes than the traditional American comfort foods. But it only makes sense since I have a video about how great the Crock Pot is on Youtube. I can’t tell you how great it is and then not give you some ideas of good meals to try, right! And ladies, us guys need all the help we can get honestly. Guys, I’m not ragging on us; I told you in the other article that it wasn’t until just a few years back that I started using the Crock Pot myself. I’m convinced that if I started using the Crock Pot earlier to get myself more comfortable with the kitchen that my life would have been different in terms of how I cared for myself, how much money I would have saved in cooking at home, and all the great experiences I would have had in cooking for my potential girlfriend and family. I blew it guys but not anymore, and I’m determined to help anyone improve their life.
Another reason it’s great to feature this meal is because Kingston loves Chicken Pot Pie 😄! With chicken, potatoes, green peas, and carrots being the ingredients, it’s all great hearty food for his growing 6-year-old little body. Also, the little guy is eating more these days so this meal is perfect! Swirl loves chicken as well so we score there too 😂. When I took Kingston’s photo after I finished the meal and he started eating, he said it was good and then looked at the camera and said, “Hey! Can I get some privacy and eat over here!” 😂.. Prep time: 10mins Cook Time: 6 hrs Total: 6 hrs 10mins Calories: 142kcal
Servings: 3 to 5
Ingredients:
2 chicken breasts (if frozen add 30mins to cooking time)
1/2 tsp poultry seasoning
1 tsp minced garlic
Salt and pepper to taste
2 cans/containers of condensed cream of chicken soup undiluted (I used Pacific Organic Cream of Chicken)
2 russet potatoes diced
2 cups frozen peas and carrots (I used organic)
1/4 cup of chicken broth
1 can biscuits or homemade biscuit recipe
Instructions:
- Place chicken breasts into the bottom of the Crock Pot.
- Season chicken with dried onion, poultry seasoning, garlic, and salt and pepper. I mixed these all in a small bowl and sprinkled it all over the chicken breasts.
- Now pour the contents of both cans or containers of the cream of chicken soup over the chicken breasts.
- Pour the diced potatoes on top.
- Now cover the Crock Pot and cook on LOW for 5 ½ hrs (if chicken breast are frozen then 6hrs) Note: Don’t clamp down the lip.
- Using two forks, shred the chicken and then put it back in the Crock Pot.
- Stir in frozen peas and carrots.
- Add the heavy cream and stir it all together.
- Cover and cook for another 20 to 30mins.
- While that is finishing up, start preparing your biscuits. Make these according to the package. (Mine were preheat oven for 350 degrees and bake for 13 to 15mins)
- Once biscuits are done, split them open in a bowl or on a plate
- Serve the chicken pot pie over the biscuits.
